Here’s what’s cookin’ Basic Muffins
Recipe from the kitchen of Jan Marwitz
Serves 4–6
Ingredients
- 2 cups all-purpose flour
- ½ Tb. sugar
- ½ tsp. salt
- 2 Tbs. baking powder
- 1 cup cold milk
- 1 beaten egg
- ¼ cup butter
- Optional: ½ cup blueberries and extra sugar
Directions
Sift together 2 cups of all purpose flour, ½ Tb. sugar, ½ tsp. salt, 2 Tbs. baking powder.
Add 1 cup cold milk, 1 beaten egg, and ¼ cup butter. Stir mixture until moistened and batter is lumpy and rough.
Fill greased muffins ⅔ full. Bake at 400° for 25 min.
If desired, add ½ cup blueberries and extra sugar.
Notes
- The abbreviations are written as "Tb." and "Tbs." (tablespoon/tablespoons) — clearly the same script capital as the "Tbsp." she uses on other cards, not "lb."
- Worth a sanity check before baking: 2 Tbs. baking powder for 2 cups flour is roughly double the modern standard (1 Tbsp. per 2 cups). The card is legible and unambiguous; this is Jan's amount, not a misreading.
